Most people assume agave is a cactus. It isn't.
Botanically, Blue Weber agave belongs to the same family as asparagus — ancient, slow-growing, and built entirely around one long purpose.
It takes anywhere from seven to twelve years to reach full maturity. It can't be rushed.
One Bloom. Then Nothing.
Near the end of its life, the plant does something remarkable. It sends up a single flowering stalk — the quiote — sometimes reaching fifteen feet tall. This is the plant's one and only bloom. After it flowers, it dies.
Everything the plant has spent a decade building is concentrated in its heart — the piña — waiting.
The Signal We Wait For
But before the harvest, there's one more signal that we wait for.
When the leaves are cut away and the heart of the agave is exposed, it begins to bleed. A thin, dark sap rises to the surface.

That bleeding is the tell. It means the agave has reached full maturity and all of its natural sugars are still intact. Harvest too early and those sugars haven't fully developed — and that's where the burn and astringency come from in most modern tequila. Wait for the bleed, and you know you have everything the plant has spent a decade building.

A single piña can weigh up to two hundred pounds. Blue Weber is the only variety of agave legally permitted for tequila production. And most agave grown for tequila isn't grown from seed at all — it's propagated from shoots, a clone of the plant that came before it.
